I will preface this recipe with a bit of insight into my cooking technique.  At the time of this cooking adventure I lived with roommates who were legitimate goddesses in the kitchen. Awe inspiring baked goods, 3 + course meals with perfect wine pairings, and the like were near daily occurrences in our home.  Being a health nut, cooking is a daily part of my routine but the process is usually regarded with a bit of a chuckle from afore mentioned kitchen goddesses.


My approach is simplistic and purposeful with two main goals:

  1. The food be nutritionally nourishing
  2. It must be satisfying- ie so enjoyable that I am not scrounging around for something different after it is consumed.

Within these parameters my food takes on many shapes, combinations, and strategies.

Tonight this lead to Beetloaf, possibly the reigning champ for best food item I have ever created (confirmed by 2 kitchen goddesses and 1 innocent bystander).

1 lb Grass-fed Ground Beef
2 Red Beets, Shredded
2 Carrots, Chopped
1/4 c Onion, Chopped
S & P
Organicville Original BBQ Sauce

8 x 8 Glass Pan.  Mix all ingredients excluding BBQ Sauce.  When all ingredients are well mixed, press into cooking pan and use BBQ Sauce as a glaze.  Place in pre-heated oven at 350 for 30 + minutes until done.

* All ingredients are organic**and preferably local
**non-GMO and have not been sprayed, buy from farmers you trust whether they have a piece of paper proving certification or not.
